Ingredients:

Beef salad
  • 300 g beef fillet steak
  • 2 tbsps olive oil
  • salt and black pepper
  • 80 g sugar snap peas, sliced
  • 1 Lebanese cucumber, sliced
  • ½ red onion, sliced
  • 50 g baby spinach
Dressing
  • ¼ cup lime juice
  • 1 tbsp fish sauce
  • 2 tsps chopped fresh mint
  • 1 tbsp chopped fresh coriander
  • 1 clove garlic, crushed
  • 1 tbsp finely chopped fresh lemongrass

Instructions

Season the steak with the oil, salt and pepper.

Cook on a preheated grill plate or barbecue until cooked to your liking.

Remove from heat and allow to rest for 5 minutes.

Meanwhile, combine dressing ingredients in a screw-top jar and shake well.

5.

Slice steak into strips.

6.

Toss together with the sugar snap peas, cucumber, onion and spinach.

7.

Pour over the dressing and serve.

Tip: This recipe is also delicious if you substitute 1 skinless chicken breast for the steak.
