What you’ll need

Serves 4


  • 2 tsp olive oil
  • 1cm piece grated ginger
  • 1 garlic clove crushed
  • 4 spring onions finely sliced
  • 300g mushrooms
  • 2tbs chopped coriander
  • Large handful of bean sprouts


  • 2 tsp olive oil
  • 8 eggs


  • 2 tbs rice vinegar
  • 1 tbs soy sauce
  • 1/2 tsp sesame oil

The easy bit

  1. Combine sauce ingredients in a bowl.
  2. To prepare the filling heat oil in a wok or frying pan and fry ginger, garlic and spring onions for 30 seconds then add mushrooms. Stir fry on high heat until mushrooms are just cooked. Remove mushrooms from wok and wipe clean.
  3. Beat 2 of the eggs in a bowl. Reheat the wok or frying pan and add the oil. When the oil is hot add the beaten eggs and swirl to spread. When the base is cooked and the top is slightly soft, place one quater of the sprouts and fold over. Remove from the wok. Repeat with remaining eggs making a total of 4 omelettes.
  4. Serve drizzled with the sauce and topped with coriander leaves.
